the best cornbread in the world!

We all jump for joy when my manly man makes his cornbread. We took it to a church function once and a senior citizen said it tasted just like her grandmothers! The recipe is out of the Original Boston Cooking-School Cookbook 1896 by Fannie Farmer. It says things like,"make sure the oven is hot".

The only reason I hesitate giving out this recipe is that not everyone has home grown indian corn that they grind. I think it gives it the old fashion touch.
My manly man grows indian corn every year, dries it , and grinds it when needed.

Here's the simple recipe straight from Fannie Farmer-

Golden Corn Cake

3/4 Cups corn meal
1 1/4 Cups flour
1/2 C. sugar
4 t. baking powder
1/2 t. salt
1 Cup milk
1 egg
1 T. melted butter

Mix and sift dry ingredients; add milk, egg well beaten, and butter; bake in shallow buttered pan in hot oven for twenty minutes. (400 degrees)

Let me know how you like it! Enjoy!

  1. You're right. If people make it with just any ol' cornmeal, Jim's cornbread is not going to taste nearly as good! Oh boy. Is he making any for the cowboy party? It seems like something cowboys would eat.

  2. Linda, thanks so much for your kind words. What a dud day it has been but I'm feeling somewhat better.

The corn bread recipe looks so good. I had to print it out with the specific instructions to make it with the Indian corn. I'm trying that next year...you better believe it!

  3. Looks great. What does the Manly Man use to grind his dried maize (corn)? A huge pestle and mortar maybe?

  5. Very cool! I miss good cornbread. Can't even find cornmeal here in Kuching.

Since you're using homegrown corn, come show off your dish in our "Grow Your Own" roundup this month. To participate, find the details here:

  6. I grew a patch of sweetcorn in the polytunnel last year. We had a reasonable crop and I stashed quite a few away in the freezer. I usually microwave them for about 8 minutes and then we slother them with butter - yummy. The cornbread recipe looks really delicious - must have a go at that one. Just have to think of a novel way of grinding the corn, but I'm sure I'll get around that one :>)
